
Lately, I’ve been getting asked for extra healthy dressings. What one terms as extra healthy is going to be different than the next person, but to me, this one meets that criteria. This pea avocado herb dressing is great for various bowls as shown, but it’s also thicker so it could easily act as a healthy dip. I’m thinking as a dip for raw veggies or if we’re being fancy, crudité, but also potatoes. Smashed potatoes with minced garlic and pink salt or sea salt dipped in this herby green dressing sounds good to me right now. If you make this, let me know how you are using it. Method
- Boil peas until soft. Drain and run under cold water until they feel cold to the touch. I actually heat up water in my tea kettle, pour over a bowl of peas until submerged, and put a plate on top for 5 minutes. Drain and rinse until cold. Any method works.
- Add the peas to a blender along with everything else. Pulse or blend until smooth. Taste and adjust if desired. Enjoy!
