Creamy Avocado Herb Salad Dressings
These avocado herb salad dressings are super simple and quick to make for your summer salads. You could also make them as a veggie dip! Avocado gives it the thicker creaminess, the herbs adds the freshness, and the garlic & lemon or lime add some zip! The Italian parsley option below is a classic, but the basil lime option is extra flavorful.
The Italian parsley option goes great with a simple kale, cucumber, tomato, and red onion mix, however, if you have fresh strawberries on hand, this dressing pairs extra well with a strawberry salad. It really tastes like summer. The basil lime option, while great for salads, is so good as a veggie dip too! Which ever you decide, you can’t go wrong with avocado, garlic, citrus, and fresh herbs.
Avocado Herb Salad Dressings (2 Versions)
Serves 4
Avocado Italian Parsley Salad Dressing:
Ingredients
- 1 avocado
- 1/2 cup fresh flat leaf/Italian parsley
- 1 garlic clove
- 1/4 cup + 1 TBSP cold water
- 1/4 tsp sea salt, more to taste
- 1/2 lemon juiced, optional tsp lemon zest
Avocado Basil Lime Salad Dressing:
Ingredients
- 1 avocado
- 7 basil leaves
- 1 garlic clove
- 1/4 cup + 1 TBSP cold water
- 1/4 tsp sea salt
- 1 lime juiced, optional tsp lime zest
Instructions
Add all ingredients to a high speed blender and blend. It is a thicker dressing, so you will need a spatula to get it all out. Toss with a salad or use as a veggie dip. ENJOY!
