Pea Avocado Herb Dressing or Dip

This pea avocado herb dressing is great for various salads, but it's also thicker, so it makes a great healthy dip as well. Think raw veggies, crudité, smashed potatoes, wherever you want a thicker herby green dressing. Add a bit more water if you want it thinner, or add less for an extra thick dip.

Ingredients
  

  • 1 cup frozen peas
  • 1 avocado pitted
  • 1 garlic clove
  • 1 scallion white and green part
  • 2 TBSP fresh parsley
  • 2 TBSP fresh dill - any fresh herbs you have on hand is great just use a small handful total
  • 1 lime or 1 small lemon add more to taste
  • 1/2 cup water use less for an extra thick dip
  • pinch of sea salt and ground pepper

Method
 

  1. Boil peas until soft. Drain and run under cold water until they feel cold to the touch. I actually heat up water in my tea kettle, pour over a bowl of peas until submerged, and put a plate on top for 5 minutes. Drain and rinse until cold. Any method works.
  2. Add the peas to a blender along with everything else. Pulse or blend until smooth. Taste and adjust if desired. Enjoy!
