
A go-to simple garlic lemon olive oil salad dressing to toss with greens. This tastes better than it appears! I’ve been making this on repeat all summer long and tossing it with arugula most of the time. Come Fall, I really like the dressing with curly kale. I’ll eat the simple salad as is prior to the rest of my lunch or dinner or I’ll use it as a base. I’ve been tossing it with steamed or baked veggies with a bit of quinoa lately or I’ll put roasted vegetables on top of it. I love that the dressing requires minimal ingredients and is an enjoyable way to get the beneficial raw minced garlic in. You’ll have good garlic breath after this one. I use 2-3 cloves for a large salad serving for myself.

My girlfriend shared with me that she mashes down her minced garlic with a pinch of sea salt to form somewhat of a paste first, so now I do this too. I add minced garlic to a tiny dish, add a pinch of sea salt, and then mash it down with the back of a spoon for 20 seconds or so. Whatever it is at that point is good enough for me. I then add in lemon and a small dash of olive oil. It’s all to taste. You just use an amount proportionate to the amount of greens you’re tossing it with. The magic is in the tongs with this one. You must really tong the dressing and greens together so that the greens are broken down and well coated.


Another dressing you might enjoy this time of year is this cilantro mint tahini dressing. You can use whatever various fresh herbs you have on hand like parsley and basil too. I tossed the dressing with quinoa, lentils, and spinach and put it in a sweet potato wrap pictured here.

- Add minced garlic to a tiny dish, add a pinch of sea salt, and then mash it down with the back of a spoon to somewhat form a paste. I do it for like 20 seconds and whatever it is at this point is great.
- Now add in lemon and a small dash of olive oil. Stir well.
- Add to salad greens. It won't look like much, but use tongs to tong the greens REALLY well so that your arugula or curly kale is well coated and broke down. This tong process makes the salad. Enjoy as a simple salad or pair with whatever you desire!
