
I LOVE chocolate, but it doesn’t always love me back. During the times it doesn’t agree with me and I need to cut it out, I turn to carob powder in place of cacao powder in recipes. My favorite thing is just a piece of dark chocolate though, so I was determined to start making myself carob bars. I ordered thin chocolate molds on Amazon and here we are. While super easy, I felt extra domestic making a homemade chocolate bar and you may too. Ha I was so excited when I tasted it and it was not lacking in any which way. I am a picky dark chocolate lover and these DIY Carob Coconut Oil “Chocolate” Bars are already a new favorite.
What is Carob Powder?
Carob powder is a cacao powder alternative that is caffeine-free, fat-free, contains great fiber, is good for digestion, and contains amazing antioxidants. If you’d rather though, you can swap for cacao powder instead. The Terrasoul Carob powder is the best tasting carob brand in my opinion.

DIY Carob Coconut Oil Chocolate Bars
Ingredients
Method
- After washing them, put the empty chocolate mold(s) in the freezer for a few hours or overnight. This step makes it easier to add the melted chocolate eventually.
- In a small bowl, melt the coconut oil so that it’s warm but not hot. I do 20 seconds in the microwave to make this quickly.
- Mix the melted coconut oil, carob powder, and vanilla powder really well.
- Slowly pour in a frozen mold. I took a large Yetti ice pack and set the frozen mold on top of the ice pack on the counter. (I placed the ice pack over a towel). It helps harden the chocolate a bit before moving it to the freezer. However you choose to do this, make sure your mold is level.
- Let the chocolate sit for 5 minutes or so until firm enough to walk with and then carefully place it level in the freezer for 15 minutes. You could even place it on a small sheet pan as another idea.
- After 15 minutes, carefully break the chocolate bar(s) out of the mold. Enjoy the deliciousness. Store at room temperature or in the fridge if it's hot.
