I can’t believe I didn’t have an actual guacamole recipe to share with you up until now. Better late than never! Guacamole is really up there for me. However, more often than not, I just doctor up a mashed avocado for myself rather than make an actual guacamole. I’m guilty of not making the time to make dishes more elaborate for myself – not that guacamole is elaborate by any means, but you know what I mean. REAALLLYYY quick and easy has been my jam for awhile now, hence the lack of new recipes. I’ve just been enjoying super simple everything and a whole lot of smoothies. In fact I have two smoothie recipes to share right after this guacamole, but I do plan on sharing more than just smoothies in the coming months. Ha Back to the guacamole. This simple authentic guacamole recipe is amazing as is or can be tweaked to your liking. I made it for my family for Easter and it was a crowd pleaser. Some feel strongly about no tomatoes in authentic guacamole so I kept them as an optional add-in in the recipe. Back in the day I would make another version with feta, Kalamata olives, & tomatoes that was super delicious too if you are looking for a unique spin. I still make it every great while, but now I skip the feta to keep it dairy-free.

How To Keep Guacamole From Turning Brown?
My mom taught me that if you tightly wrap guacamole with plastic wrap over the bowl, pressing the plastic wrap down to the guacamole so that there is no air, the guacamole won’t turn brown. While I don’t normally use plastic wrap, it’s a great tip for a party when you want to pre-make the guacamole. Another way I read is that you can squeeze lemon or lime over the top OR add a thin layer of water to stop the oxygen from turning the guacamole brown. Just make sure the entire surface is covered. Pour off the water, if using water, before stirring up and serving.
If you are preparing a Mexican feast or just a Friday night nacho movie night, you might like this Pico De Gallo to serve with it.

Or this homemade salsa. It was made pretty thin here, but it can also be made chunkier by not pulsing the food processor as much.
This extra delicious Cashew Queso Dip is always a hit too.
