This dairy free cashew queso dip tastes legit. Cheese can be a tough one to minimize or eliminate, but thankfully cashews come to the rescue in so many recipes. I’m still figuring out better cheese alternatives for certain things, but thankfully I’ve got queso down and now you will too.
Queso makes a great appetizer or a fun meal with black beans, salsa, and some chopped up romaine lettuce. Oh & don’t forget the chips. You could always use baked potato slices as “chips” too!
Cashew Queso Dip
Ingredients
- 1/2 cup unsalted raw cashews, soaked in a bowl of hot water for 45 minutes, I use hot water from the tea kettle
- 1 cup salsa of your choice, store bought or homemade
- 1/8-1/4 tsp turmeric, for color
- 1/2 jalapeno, seeded
- 3 small shakes of cayenne
- pinch of Himalayan salt or sea salt
- 2 TBSP water
Method
- Soak 1/2 cup cashews in a bowl of super hot water from the tea kettle for 45 minutes.
- Drain the cashews and add them to a blender. I use the nutribullet for this.
- Along with the cashews, add in 1 cup salsa, turmeric for color, jalapeno & cayenne for some heat, a pinch of salt, and a little water to thin it out some. Blend & Enjoy!
Tidbit: I’ve made this with a squeaky clean salsa from Whole Foods (I forget the brand) and Frontera roasted tomato salsa (not as “perfect” of ingredients, but less expensive) – both times it tasted great. So any traditional red tomato base salsa will work!
