This creamy hemp + pumpkin seed salad dressing pairs well with so many salads. It has a mild taste from the hemp + pumpkin seeds and is just slightly sweet with a touch of citrus from the orange and lime juice. It also has a thinner consistency for a creamier dressing, which makes it extra easy to coat a salad. You can play around with this one too. I’ve tried it with lemons, but I personally like the lime. I’ve also added in a medjool date or two when I wanted additional sweetness. My trusty go-to in this one is just an orange though.
Hemp seeds/hemp hearts are a good source of omegas and pumpkin seeds are a great source of zinc.
Pair it with any salad of your liking. I even ran out of greens the past few days so my “salad” was thinly sliced celery, red bell pepper, and this dressing. It tasted great.
Hemp & Pumpkin Seed Salad Dressing
This makes about 2 cups of dressing, so plenty for a handful of salads. Store it in a tightly sealed jar or container and it will keep up to 3 days in the fridge.
Ingredients
- 1/2 cup raw pumpkin seeds
- 1/3 cup hemp hearts/seeds
- 2 limes, juiced
- 1 juicy orange, juiced
- 2 garlic cloves
- 1/4 tsp Himalayan or sea salt
- 1 cup water
Method
Blend everything in a blender until smooth. I use my nutribullet for this one.
