Eating healthy does not need to be time consuming or hard. Yes, if we want to make more elaborate recipes, it’s going to take time, but we sometimes forget just how simple healthy eating can be. My recent go-to salad can be made in around 4 minutes. Stick to the “recipe” or play around with what you have on hand. It has creaminess from the avocado, saltiness from the lemon and olives, and sweetness from the raw honey. A good balance of flavors for a satisfying salad.
My 4 Minute Salad Lunch
Use whatever portions you need to feel satiated. If you want to make it extra hearty, you could add in chickpeas. If you don’t have tomatoes, add in red bell pepper – or use both! I have a video of me making it below.
Ingredients
- 3 heaping cups of arugula
- 1 cup shredded carrots
- handful of grape or cherry tomatoes, cut in half
- 5/6 Green Olives
- 1/2 Avocado
- 1/2 lemon, juiced
- 1 garlic clove, chopped or minced
- raw honey
- good sprinkle of oregano
- sprinkle of cayenne
Method
Add everything to a large salad bowl. Mish mash it together so that the avocado, lemon juice, and honey is well dispersed. Enjoy!
