
Zucchini ranch gives us that ranch-ish taste and even better, it’s made from wholesome ingredients. The next time you’re looking for a good creamy salad dressing or pizza dip, give this one a whirl.
If you happen to live with an avid rancher and this doesn’t end up cutting it for them, don’t give up. There are many healthier ways to make ranch – coconut yogurt, tahini, and hemp hearts to name a few. I’ve just been playing around with different zucchini dressings lately, and this one made the cut to share with you. Also, it’s just easier to blend all the ingredients together, but if the green color gets in the way of enjoyment, blend everything but the herbs and stir them in at the end. You just have to REALLY finely chop them up if you decide to stir them in.


Zucchini Ranch
Makes around 1 cup
Ingredients
- 1 small zucchini, peeled and chopped
- 1/4 cup raw cashews
- 1 lemon, juiced
- 1 small garlic clove
- 1/2 tsp onion powder
- 1 packed TBSP fresh dill
- 2 packed TBSP fresh parsley
- 1 packed TBSP chives, optional but adds a lot
- 1/4 tsp sea salt
- pinch of ground pepper or 3 grinds on the pepper mill
- 3 TBSP water
Method
Add everything to a high speed blender and blend until creamy. Taste and adjust as desired. ENJOY! I use the nutribullet for this.
