This is my go-to massaged kale salad. While a super simple salad with minimal ingredients, it’s how I make that makes it more appealing, desirable, and delicious to eat. Whether you are a salad aficionado or are newer at making kale salads, I hope you enjoy this simple tangy kale salad as much as I do.
My Go-To Massaged Kale Salad
Serves 1-2
Ingredients
- 1 large head of curly kale (large stems removed, washed, & roughly chopped) OR 2/3 of a 12 oz bag of organic kale
- 1-2 lemons, depending on lemon preference and size of lemons
- 1/2 ripe avocado
- 1 raw garlic clove, minced
- sea salt or Himalayan salt
- ground pepper
- optional, red pepper flakes or cayenne
Method
Visual Video below.
- Add the kale to a large mixing bowl. If using bagged kale, remove all of the large stems; squeeze the kale in bunches to make sure you get them all. If using loose kale, it’s easiest to remove the large stems prior to chopping and washing. You can save the stems for juicing or adding into smoothies.
- Once the stems are all removed, squeeze in the lemon(s) and avocado. Start with 1 lemon if you are unsure, you can always add a 1/2-1 more at the end.
- With your hands, start breaking down the kale by squeezing it in bunches. Massage in the lemon and avocado so it’s dressed throughout.
- Add in the minced garlic, salt, and ground pepper to taste. Tong together well. ENJOY!
