Chocolate covered peanut butter balls are a classic Christmas staple in my family and possibly yours. This healthier version is made clean using natural peanut butter with just peanuts (possibly salt), almond flour, cleaner chocolate, coconut sugar or honey (your choice), sea salt, and coconut oil. If desired you could always swap the peanut butter for almond butter too. I was tempted to make them with almond butter as I don’t usually buy peanut butter, but I wanted the classic taste for Christmas.
When it comes to baking, even no-bake treats like this, you’ll notice the cost is higher than conventional ingredients when you start swapping out your pantry products for cleaner ones. Your body thanks you though and hopefully your family or friends appreciate the better ingredients too. If not, make a half batch and save them for yourself! Ha.
Two cleaner chocolate brands for peanut butter balls:
The best in terms of ingredients is Hu Gems as there is zero refined sugar. Ingredients: organic cacao, organic unrefined coconut sugar, organic cocoa butter. They are the priciest of the two brands though and depending on where you live they are harder to find than the Enjoy Life brand. Enjoy Life is still pricier than conventional chocolate chips, but WAY cleaner ingredients. Turn around bags and compare ingredients. You’ll see what I mean. Anyways, Enjoy Life does contain refined sugar which isn’t ideal for our health, however, when it’s for an occasional treat, you might be fine with it. Only you know what is right for you. If looking at Enjoy Life, I would grab either the Enjoy Life Mega Chunks or Dark Chocolate Morsels for these peanut butter balls. Mega Chunks Ingredients: Cane sugar, unsweetened chocolate, cocoa butter. Dark Chocolate Morsels Ingredients: Unsweetened Chocolate, Cane Sugar
Healthier Chocolate Peanut Butter Balls
Makes around 24 balls.
Ingredients
- 1 cup fine blanched almond flour
- 1 cup natural peanut butter (smooth or crunchy), from a new jar at room temperature
- 1/2 cup coconut sugar (I use this) OR 1/3 cup honey
- 1/2 tsp sea salt unless you have salted peanut butter
- 1 cup Hu Gems or Enjoy Life Mega Chunks or Dark Chocolate Morsels
- 1 tsp coconut oil
Method
- Line a 13 x 9 baking dish with parchment paper.
- In a mixing bowl, stir the almond flour, peanut butter, coconut sugar or honey, and salt until well combined. You want the mixture to stick together so it forms into balls. If it’s hard to roll them, put the dough in the freezer for 5-10 minutes first.
- Scoop out spoonful’s of dough and roll into 24-26 balls.
- Place the rolled balls in the lined baking dish. Put the dish in the freezer for 20 minutes.
- Melt your chocolate and coconut oil. You can use the double boiler method or use the microwave. I use the microwave since it’s the easiest. I place the chocolate and coconut oil in a small bowl. I do 30 seconds – stir it – 30 seconds stir it – and 20 seconds.
- Roll balls one at a time in the melted chocolate. Use a spoon or a fork (I find a fork easier) to pull each ball up the side of the dish. You do need to move somewhat quickly so the chocolate does not harden. Place the dipped balls back in the lined baking dish.
- Store in the freezer until ready to eat. They keep for an extra long time in the freezer, but I can assure you that they won’t last that long. ENJOY!
