Instant Pot Yellow Potatoes

It’s that time where we want to quickly wash and toss our yellow potatoes into the instant pot, but we don’t remember how much water to add or how long. I’m here for you….and me. I’m not even going to make us scroll unless we want to. A 3 lb. bag of whole yellow potatoes placed over the trivet needs 1 cup of water with a pressure cook time of 13 minutes. Quick-release that baby right away. If your potatoes are older and extra soft, do 12 minutes with a quick release. I’m talking about smaller whole yellow potatoes solely rinsed beforehand. No fork pierces, no cutting, nothing. Some bags have larger yellow potatoes in them. If you get some of those, cut those few in half. Notes on varied time below.
Easy Meal Idea With Tender Yellow Potatoes: One of the most simple, nourishing, and grounding meals is some steamed yellow mashed potatoes alongside a salad. I seasoned the yellow potatoes with fresh thyme, Himalayan salt, and ground pepper in the below picture. Alongside is some arugula, grape tomatoes, green onions, a squeeze of lemon juice, and ground pepper.

Ingredients
- 3 lb bag organic yellow potatoes, washed – small ones left whole, cut larger ones
- 1 cup of water
Instructions
- Place the trivet in the bottom of your instant pot and add 1 cup of water.
- Place the washed potatoes on top of the trivet. Cut larger potatoes in half.
- Pressure cook for 13 minutes and then quick release the pressure once the time is done. If your potatoes are older and softer than normal do 12 minutes with a quick release. Enjoy how you wish!
Note on times: I eat a lot of potatoes and these times never fail me, but occasionally you get an extra hard batch. If you quick release them and they are not quite done, but oh so close, just put the cover back on quickly. The steam inside is enough to cook them slightly. If you really think you need more time, just add on 1 minute or maybe 2, again quick releasing right away. It will take pretty much no time to build pressure and cook that extra minute or two.
Although I eat all of the potato types, there is just something about the creaminess of a yellow potato that feels extra comforting. Freshly steamed & mashed down with a squeeze of lemon juice and sprinkle of thyme is just one of the many ways I enjoy them simply. I also eat them cold many times too.
