
Just make it. You’ll be happy you did. Your salads, tacos, or possibly French fries will taste extra good this week. What I love about it is that many dressings you need to make last minute to taste good. This one however, keeps pretty well for 3-4 days and doesn’t solidify too much. Just give it a good shake each time and you’re set. If you’re in the mood for a lentil taco salad, this easy and creamy cashew chipotle sauce or dressing pairs really well with it. I could eat the combo on repeat for awhile.

Easy Creamy Cashew Chipotle Sauce or Dressing
I use my small beast blender for this. If you only have a wide Vitamix container, you can double the recipe to make it easier. The recipe as is makes 2 cups of dressing. Store in a tightly sealed glass mason jar in the fridge. Keeps up to 3-4 days. Shake well before each use.
Ingredients
- 1 cup cashews, ideally soaked in room temp water for around 6 hours for the creamiest sauce – in a pinch though, soak in a bowl with hot water from the tea kettle for 15 minutes – drain prior to adding to blender
- 1 cup water
- 1 tsp chili powder, more to taste
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2-1 lime, juiced – start with 1/2 and add more to taste
Method
Add everything to a small blender. I blend for 1 minute in the mini beast, stop, and then blend again for another full minute. Taste and adjust seasonings if desired. Enjoy as you wish!
