
A lentil taco salad that I can’t get enough of. It packs a good crunch with the cabbage and romaine and pairs perfectly with my creamy cashew chipotle dressing.

Lentil Taco Salad
Serves 1
Ingredients
- 1 cup white cabbage, thinly shaved
- 1 cup romaine, finely chopped
- 1/4 small red onion, chopped
- 1 green onion/scallion, chopped
- small handful parsley, finely chopped
- 1/2 orange bell pepper, chopped
- 1/4 cup grape or cherry tomatoes, halved
- 1/2 cup black lentils, I use Traders Joe’s refrigerated lentils for this one
- creamy cashew chipotle dressing
Method
- After chopping all, add the cabbage and romaine to a salad bowl.
- Sprinkle on the red onion, green onion, parsley, bell pepper, tomatoes and lentils.
- Drizzle dressing over and enjoy!
