
Tuesday Taco Night? Saturday Taco Night? Whatever night of the week, these sweet potato tacos are hard to resist. Since you have to cook the sweet potatoes in the oven, it’s not a super quick meal (unless they are leftovers), but it’s an easy one.








If you are eating with others: It’s fun to serve everything family style and let everyone build their own tacos. In the pictured taco night below we heated up a can of black beans and seasoned them with cumin to serve with our leftover sweet potatoes. Black bean sweet potato tacos! 😊


Sweet Potato Tacos “Recipe”
We have leftover cubed sweet potatoes with two of us, but they make good leftovers.
Ingredients
- 3 good medium sized sweet potatoes (organic & skins on), cubed into small chunks
- 1 TBSP coconut oil
- 1 TBSP curry powder, use a little less if preferred
- Siete almond flour tortillas
- cherry tomatoes, halved
- banana peppers, diced
- jalapeno, diced
- avocado, diced
- red onion, diced
- cilantro
- lime wedges
- Casa Verde Foods salsa taquera, optional but adds so much
Instructions
Preheat the oven to 400.
- In a mixing bowl, toss the cubed sweet potatoes with the coconut oil and curry powder with your hands until well combined. (Yes, it is messy)
- Spread the sweet potatoes out on a parchment paper lined baking sheet.
- Bake them around 50 minutes. (oven times vary). Check on them at minute 40 and flip them around so they don’t burn on one side.
- Once the sweet potatoes are done, lightly heat up the almond flour tortillas.
- Add some cubed sweet potatoes to each tortilla and top with all of the toppings. ENJOY!

- Costco sells the Siete Foods Almond Tortilla Wraps in a pack of 20 for around $12. It is a really great deal as opposed to Amazon or Whole Foods. However, the almond tortilla wrap ingredients sold at Costco contain different ingredients than the 8 pack at Whole Foods. Yes, same exact company with different ingredients depending on where you shop. Crazy, but it’s true. Another reason to always read your labels. I buy them from both places, but just know if you avoid all vinegar, there is apple cider vinegar in the Costco package.
- The Casa Verde salsa is not your typical salsa taste with the tomatillos and chipotle peppers in it, but it pairs so great with these sweet potato tacos. No vinegar, citric acid, or table salt (which reads “salt” instead of “sea salt”), and all clean ingredients!
