I’ve made these raw zoodles, leaks + sundried tomatoes a few times lately and I wanted to share here. It’s a good one to remember for a 5 minute meal.
Zoodles, Leaks + Sundried Tomatoes
Ingredients for 1
- 1 or 2 large zucchinis, spiralized – my favorite spiralizer – (video of me using it below)
- 1/2 – 1 leak (depending if you used 1 or 2 zucchinis), chopped
- 1 large garlic clove, minced
- handful of sundried tomatoes, roughly chopped
- 1/2 avocado
- 1-2 TBSP hemp hearts
- 1 lemon, juiced
- dash of cayenne
- sea salt & pepper, to taste
Method
Add everything to your serving bowl. Mash up the avocado with your fork and mix everything together until well combined. Enjoy!
