This creamy zucchini salad dressing was the result of me eating a lot of salads during the month of January.
While an avocado dressing is always a creamy go-to, sometimes I don’t want to blend up my avocado and would prefer to eat it.
Enter this zucchini salad dressing. It’s an extra healthy one, tastes really fresh with the herbs, and goes well with a variety of salads.
The addition of pumpkin seeds is what gives it the creamier consistency we sometimes want. You can always substitute it for sunflower seeds in a pinch too.
You can easily play around with the flavor of this dressing by adding different herbs depending on what you have on hand.
The medjool date makes this dressing sweeter, so if you don’t want that, just omit it.
Due to the nature of the dressing, it’s best eaten within two days.
Creamy Zucchini Salad Dressing
Makes 1 1/2 cups – 2 cups dressing depending on zucchini size. Plenty for 2-3 good size servings.
Ingredients
- 1 medium sized zucchini
- 1 cup of mixed herbs of your choice- dill, parsley, basil, etc. (I have been using 1/2 cup dill and 1/2 cup parsley)
- 2 TBSP chives
- 2 TBSP pumpkin seeds
- 1 garlic clove
- juice of 1 juicy lemon, you might need 2
- 1 pitted medjool date
- 1/3 cup water
- pinch of salt or to taste
Method
Add it all to a blender and blend. Taste it and adjust to your taste buds. Serve over a fresh salad and ENJOY! I’ve been making this one in my nutribullet.

The pumpkin seeds help make this dressing creamier. If you don’t have pumpkin seeds, you can always use sunflower seeds in a pinch as well.
