Creamy Sundried Tomato Dressing + Zoodles
A simple creamy zucchini based dressing with the addition of sundried tomatoes for a brighter flavor. Toss with zucchini noodles, aka zoodles, cherry or grape tomatoes, and a large handful of arugula for an easy lunch.
Creamy Sundried Tomato Dressing + Zoodles
Makes a little over a cup of dressing for 2-3 zoodle salads. Use within 2 days.
Dressing Ingredients
- 1 small-medium sized zucchini
- 2 TBSP pumpkin seeds
- 3-4 TBSP sundried tomatoes, brands/tomatoes vary so start with 3
- 1 large garlic clove
- 1 large lemon, you might need 2
- optional, few fresh basil leaves
- Himilayan or sea salt, to taste
- 1/3 cup water
Method
Add all the ingredients to your blender and blend until creamy. I use the nutribullet for this. Taste it and adjust to your taste buds (tomatoes/lemon/salt). If you need a tad more liquid, add in more lemon juice or water. It is meant to be a thick dressing though. Toss with a zoodle salad and enjoy!

- 1 zucchini, skin peeled and then julienned into strips
- handful of sliced grape tomatoes, cherry tomatoes would be ideal if you have them
- large handful of arugula
- ground pepper
- optional, fresh basil
