Simple Broccoli Pasta Dinner

A box of pasta, jarred sauce, a bag of frozen broccoli… it does not get more simple than this. You don’t even have to saute the onion and garlic add-ins. It keeps the sauce a bit fresher tasting this way. This pasta is also an easy way to get broccoli into our diet and add some nutritional value to basic pasta. As long as you have good tasting sauce, this is a winner. I used a clean ingredient (& inexpensive) Whole Foods pizza sauce, but any sauce of your choice is great. I also doctored it up a bit with extra oregano and a few dashes of cayenne for a good kick. You can do the same seasonings or any others that float your boat.

Simple Broccoli Pasta Dinner

Ingredients

  • box GF Jovial Foods Penne
  • 1 jar Whole Foods Pizza Sauce, or any jarred sauce of your choice
  • 1 bag frozen broccoli
  • 1/2 large red onion, roughly chopped
  • 3 large garlic cloves, roughy chopped
  • few shakes of oregano, cayenne (only if you like spice), & ground pepper, or season to taste

Method

Boil water for the pasta. Meanwhile in a separate large and deep pan, add the frozen broccoli, red onion, garlic, and 1/2 cup of water (add a 1/4 cup more if the water absorbs before the broccoli softens). Cook the broccoli over medium heat stirring here and there. I cook it with the cover off since it takes a bit for the pasta to cook anyways. I also want the broccoli slightly crunchy & not overcooked.

Once the broccoli starts to soften and the water absorbed, add in the jar of sauce and desired seasonings – cayenne and oregano. If using the pizza sauce, add in an additional 1/3 cup water since it’s thicker than traditional pasta sauce. Stir here and there while your pasta cooks. Once ready, stir in your pasta. Season with ground pepper and enjoy!
