
You get the feeling of both an energizing healthy salad and fun chips or nachos with this quick black bean taco salad. It’s the perfect combo for a fun meal in my house. If you use store-bought guacamole and salsa with canned black beans like I did for this, you’ve got dinner or lunch in about 5 minutes.


Quick Black Bean Taco Salad
Use whatever proportions you need to feel satisfied
Ingredients
Romaine, chopped
grape or cherry tomatoes, halved
black beans
red or white onion, diced
yellow bell pepper, diced
homemade or store-bought guacamole, I like the go-foods brand from Costco or get the Trader’s one
homemade or store-bought salsa
Siete chips, regular or lime (the lime version has citric acid which can irritate a sensitive gut)
Method
Add everything above to a large salad bowl. Mish and mash together. I like to crunch a few chips in the salad as well as scoop up some of the salad and eat it with chips. It’s so good. ENJOY!
