
This mushroom broth soup is really more of an idea for you than a concrete recipe you need to follow. It’s not over the top flavorful or a wow soup by any means, but it’s one of those super nourishing grounding soups that is wonderful for the body and good for the soul. I think of it as a healing broth or soup. If you are in the mood or in need of this, then proceed. 🙂

I used what I had in my fridge for green veggies and fresh herbs and added it to a big Costco container of organic brown baby bell mushrooms. If you have a mix of mushrooms by chance, even better. It will be tastier and contain even more health benefits as each type of mushroom carries some different benefits. I had one carton of broth so I used that along with water, but you could use two cartons of clean broth for more flavor, or all water if you don’t mind a bit less flavor. I mainly use water in soups now since I make them so often and it saves $. If you want an extra good tasting soup though, buy the Bonafide broth. As for spices, I just added some spices depending on what I was feeling taste-wise and health-wise. Needless to say, play around with your spices and what sounds good to you in the moment. You can always start with less and add more to taste towards the end. The grated ginger and fresh herbs added a lot to this, so I highly recommend using those. Like many soups, this one tasted even better the next day.

I added kelp noodles since I have a lot of them and need to use them up. If you want to add them too, this is how I prepare them.

- Rinse your kelp noodles in a fine mesh strainer really well to rinse off the packing water.
- Add a good amount of hot water to a glass bowl. (I heat up water in my teapot.)
- Submerge your noodles in the hot water.
- Add in the juice of 1 lemon or lime, and 1/2 tsp sea salt.
- Let stand for 30 minutes.
- Rinse the noodles in a fine mesh strainer with cold water.
- They are ready to go to be added into soups, Pad Thai, and more.

- Add everything but the lemon to a large pot on the stovetop. Bring to a boil, and then reduce heat, cover, and simmer for 1 hour. Taste and add in more sea salt, seasonings, and lemon as desired. Enjoy this nourishing soup.
