Mushroom Broth Soup

This mushroom broth soup is really more of an idea for you than a concrete recipe you need to follow. It's not over the top flavorful or a wow soup by any means, but it's one of those super nourishing grounding soups that is wonderful for the body and good for the soul. I think of it as a healing broth or soup. Play around with whatever spices and fresh herbs you have on hand and sounds good to you.

Ingredients
  

  • 1 yellow onion diced
  • 6 garlic cloves fined chopped
  • 5 green onions/scallions chopped
  • 1 jalapeno finely chopped or a pinch of cayenne
  • 2 " ginger peeled and grated
  • 1/2 bunch celery thinly sliced
  • 1 zucchini diced
  • 24 oz organic brown baby bell mushrooms or a mushroom mix
  • handful of fresh cilantro chopped
  • handful of fresh parsley chopped
  • 10 fresh basil leaves chopped - use whatever fresh herbs you have. It's summer so I'm using extra this time.
  • 1 tsp dried thyme
  • 3/4 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp Ceylon cinnamon
  • optional package of kelp noodles, prepared prior
  • 1/2-1 lemon
  • sea salt and/or dulse flakes and ground pepper to taste
  • 4 cups vegetable broth Bonafide veggie broth is a clean brand
  • 6 cups water you can use all broth for more flavor or all water with more herbs and spices to save $

Method
 

  1. Add everything but the lemon to a large pot on the stovetop. Bring to a boil, and then reduce heat, cover, and simmer for 1 hour. Taste and add in more sea salt, seasonings, and lemon as desired. Enjoy this nourishing soup.
