An extra hearty blueberry banana oatmeal for breakfast or lunch. I often have a smoothie for breakfast and if I’m still hungry I’ll have some fresh fruit as well. Come lunchtime, if I’m still not ready for anything savory and want a sweeter hearty option, I’ll make some oatmeal. This one is on heavy rotation at the moment.
Hearty Blueberry Banana Oatmeal
1 Serving
Ingredients
- 1 cup water
- 1/2 cup GF oats
- 1 TBSP ground flaxseed
- 1/2 tsp Ceylon Cinnamon
- optional, pinch vanilla powder
- 1/2-1 cup fresh or frozen blueberries*, wild blueberries are usually my first pick with smoothies due to the incredible health benefits, but regular blueberries are sweeter and add more flavor to this
- 1-2 bananas, sliced depending on hunger level – I often do 2 and it keeps me super satisfied and full for a lot longer – spotty ripe bananas are going to make this taste much better & sweeter
*Adding frozen blueberries will of course cool down the oatmeal a lot, but it’s what I use in this. I stir them around quickly so they unthaw fast from the heat.
Method
- Bring water to a boil in a small pot.
- Stir in the oats and simmer on low to medium heat for 7 minutes until cooked.
- Stir in the flaxseed, Ceylon cinnamon, vanilla (if using), blueberries, and sliced banana. Optionally top with a sprinkle of cinnamon. Enjoy!
