Some nights a box of pasta with a jar of sauce just hits right. And some nights, it’s just the easiest option. While there is nothing wrong using the noodles and your store bought sauce (clean ingredients of course) as is, I like to add a little more oomph to the meal. Some onion, garlic, and extra spices takes very little effort and goes a long way. I also like to add in spinach when I have it on hand. Wherever I can get some extra greens in a meal, I will. This doctored up simple pasta might take 5 more minutes of effort, but I think you’ll find it’s worth it.
Doctored Up Simple Pasta
Ingredients
- box of pasta of choice – Jovial (brown rice) and ZenB (100% yellow peas) are my main go-to’s
- clean ingredient jar of sauce of choice – pictured is Cadia’s Organic Arrabbiata Pasta Sauce
- 1/2 yellow onion, diced
- 3 garlic cloves, finely chopped
- few good shakes of thyme
- shake of cayenne
- 2 large handfuls of spinach
- optional, fresh basil to serve
Method
- Sauté onion and garlic in a sauce pan. Meanwhile boil water for your noodles.
- Once sautéed, add in the jar of sauce. Sprinkle in a good amount of thyme, a good dash of cayenne, and simmer until the noodles are cooked.
- Once the pasta is drained, add the noodles back to the large hot pot. Add in the spinach and pour the sauce over. Give it a good stir and the heat from the sauce will wilt the spinach.
- Sprinkle in some fresh basil if you have on hand, if not omit. ENJOY!
