
Beautiful mixtures of fruits and veggies make you more excited to eat them! You are also getting loads of different nutrients when you eat the rainbow. This chopped vegetable fruit salad is a typical lunch I make during the summer months. It all depends on what’s in my fridge on a given day as to what I throw in it. It’s an easy dish to throw together in around 5 minutes and makes a great packed lunch. There is no soggy lettuce going on here. When you need a change of pace from the leafy green salads, this is a delicious go to. It packs a good crunch too.
Chopped Vegetable Fruit Salad
Serves 1-2
Ingredients
- 1/2 large cucumber
- 3 large radishes
- 1/2 large apple or 1 small apple
- 3 medjool dates
- 1/3 cup of yellow bell pepper
- 1/3 cup of orange bell pepper
- 1/2 avocado
- 1/2 large lemon
- 1/4 tsp dulse granules (can substitute a pinch more of salt)
- small pinch of Himalayan salt
- pinch or couple shakes of cayenne pepper to taste
Instructions
- Wash, chop and throw it all in a large bowl. 1/2 large cucumber, 3 radishes, 1/2 large apple, 1/3 cup of yellow bell pepper, 1/3 cup of orange bell pepper, 3 medjool dates (pitted) See my pictures for size. You can’t screw it up – just chop.
- Score a 1/2 avocado into smaller squares with a knife. Spoon out the diced chunks by staying close to the peel with your spoon. Add to the large bowl.
- Squeeze in 1/2 large lemon to the bowl.
- Sprinkle in the dulse, sea salt, and cayenne pepper to taste.
- Spoon it all together. Don’t use tongs if you want the avocado chunks to stay somewhat in tact.
Riane’s Tidbits
The medjool dates (make sure to get medjool) and avocado give this chopped salad the creamy sweetness it needs. Be sure not to skip out on these! You may not have liked dates in the past, but give them a chance with different ways of eating them. I don’t enjoy eating a date by itself, but I love them mixed in recipes.

Hi Riane. I came across your YouTubes while searching for Anthony Williams videos. I’ve been doing the Heavy Metal Detox smoothie for a year now but I’m having trouble when I try to add the celery juice to my routine. I wake up, drink 16oz of lemon water with honey, wait 30 mins than drink 16oz celery juice, wait 30 mins than drink the heavy metal detox smoothie. On the days I try to do the lemon water and celery it just runs right thru me. So I only last a few days each attempt. Any suggestions? I really want to keep going with the lemon water and celery.
Hi Dave! Everyone’s experiences are different due to our different toxic load, but I feel like I was running to the bathroom for a good few months when I was doing the 3 right in row. Celery juice is so powerful at removing out junk. Combined with lemon water & the HMDS too, it feels extra cleansing. I just knew it meant my body had a ton of toxins it needed to flush out. I tried to think of it as a good thing, since it meant more was flushing out of me. However, I know if you have to be at work during this time, it can be a bit troublesome. If you can, try doing it all before work- it might be easier said than done though. Otherwise, my next suggestion would be to start with a lower amount of celery juice and then work your way up to the 16 oz. Maybe start with 6-8 oz and stick with that for a bit until you are used to it. You’ll still be going to the bathroom, but hopefully it won’t run right through you as fast. Just know it won’t feel like this forever. Yes, it should make you go to the bathroom, but it won’t be like this extremely urgent thing every day. I hope this helps.
