
These incredibly easy 3 ingredient pancakes with no egg are a great one to make for kids. I’m thinking many big kids will enjoy them as well. 🙂 They are a more dense pancake and stay together super well, so it’s an easy one for kids to hold and eat with their hands too. If you want them a bit more fluffy, you could add 1 tsp baking powder and 1/2 tsp baking soda. It’s already sweet with the coconut water and ripe bananas, but you could also add in some vanilla if desired. Top with whatever toppings of choice: maple syrup, date syrup, jam, bananas, berries, cinnamon, nut butter… However you choose, I hope you enjoy them.
3 Ingredient Pancakes No Egg
Makes 6-8 pancakes (I made a half batch in video below)
Ingredients
2 cups oats, I get a big bag of gluten free oats at Costco
2 ripe bananas, you want them ripe or they won’t taste good or form as good of a pancake
1 cup coconut water, I use the Aldi’s coconut water – it’s just 1 ingredient
Method
1. Add the oats to the blender and blend until really fine.
2. Add the banana and coconut water and blend again really well.
3. Heat up a large nonstick pan over medium heat. If you don’t have a good nonstick pan, use some coconut oil.
4. Once the pan is hot, pour small amounts of batter in the pan making 3-4 pancakes at a time depending on desired size.
5. Cook for 3 minutes or until you see the tiniest of small bubbles form. Flip over and cook 3 ish more minutes until cooked through.
6. Top with desired toppings of choice and ENJOY!
