Sweet Potato Pizza Toast

You’ve got to try out a sweet potato pizza toast. I’ve been making sweet potato toasts every which way this winter and this loaded pizza version is so good. Get creative with whatever type of pizza toppings you’re feeling like; maybe try out a few versions.

Sweet Potato Pizza Toast

These are the ingredients I used below, but use what you are feeling and have on hand.


Ingredients

Sweet potatoes

jarred pizza sauce

artichokes, I rinse to minimize the citric acid

broccolini, I prebaked for 10 minutes in the oven prior to adding

jalapeno, I prebaked for 10 minutes on a sheet pan with the broccolini

red onion, thinly sliced

minced garlic

fresh basil

sliced tomato

black or green olives

optional cheese of choice, I had a homemade cauliflower one to use on the basil tomato ones, but was just as happy without it

oregano

red pepper flakes

ground pepper

Method

Preheat oven to 400.

Slice sweet potatoes into toast like sizes at 1/4 – 1/2 inch thick.

Bake them on a parchment lined baking sheet at 400 degrees for 30-40 minutes depending on how thick you slice them. If you want them more toasted definitely add and spread out a little oil on each side. A toaster oven or air fryer (I have the wonder oven) works extra great for these and gets them toasted better, but I use the oven when making a lot at a time.

Chop and prep your pizza toppings.

Once ready, top the cooked sweet potatoes with your desired pizza toppings starting with the sauce. Put back in the oven for 5-8 minutes. Garnish with oregano, red pepper flakes, and black pepper. ENJOY!
