
Okay, so it isn’t quite summer yet, but I wanted to share 10 of my personal favorite summer recipes here on the blog.
This is one of my top all time favorite recipes that I love and make often in the summer. I also make it for others since I know they’ll enjoy it. Even those that think they don’t like lentils, quinoa, or any “weird stuff.” Haha Chop those raisins super finely and it will please most. I do add more olive oil when I’m making this for others. You can make this extra easy like I do often do now by using a whole pack of Trader Joe’s packaged and seasoned lentils in the refrigerated section along with one or two cans of rinsed and drained chickpeas. This is in place of making the two cups of dried lentils.

The sweet tahini garlic dressing pairs perfectly with the crunchy romaine, cilantro, parsley, cucumber, red onion, and cannellini beans. I made this what I had left in my fridge one week and it’s become a repeat go-to in the summer. It’s tastier than what meets the eye.

Mark and I both love this one. It has also become a signature go-to smoothie that I make for friends and family since I know they’ll like it. It’s so delicious. You have to try it.

I had to make this juice or mocktail version of the smoothie.

Earthy greens, quinoa to give it more substance and texture, creamy avocado, Kalamata olives to give it some saltiness, pure tahini, and possibly a touch of maple syrup or dried cranberries if you desire some sweetness. I was inspired by the simple salad on vacation in Costa Rica and it is one of my go-to’s when I want a more grounding feeling salad.

I’ve shared this one so often, but it’s because it’s such a crowd pleaser. It also happens to be one of my favorite summer recipes.

If you are interested in a sweet, curry, mustard, tahini dressing, you’ll really enjoy this. Drizzle it on various salads (I have some pictures for ideas in the post) or drizzle over some salmon if you eat salmon.

My caffeine free version of Moroccan Mint Iced Tea. I prefer it slightly sweetened with the honey in the recipe. My recipe calls for loose leaf tea, but you can substitute 4 or 5 raspberry leaf tea bags as well. Pair with the Mediterranean Lentil Recipe above for the perfect pair.

I love living this lifestyle. There is generally a healthier swap for most things and this ice cream or nice cream never makes me miss my previous favorites.

It was hard limiting this to 10, but I’m giving the 10th spot to this very non-traditional curry. It has the most mild coconut milk, curry taste with little pops of flavor. What makes this one more summer-like is the fresh mint and basil. It really pulls the rather simple dish together.
