
A shaved cabbage salad with tahini dressing when you feel like eating a big bowl of crunch. While the dressing makes eating cabbage delicious, most of the magic is in the finely sliced cabbage. Cutting the cabbage as thinly as possibly turns the cabbage into shreds. This gives it the best texture and makes it easy to toss with the dressing so it’s well coated.

Shaved Cabbage Salad With Tahini Dressing
1-2 servings
Ingredients
1/4 large cabbage, really finely sliced
1/2 small-medium white or yellow onion, finely sliced into rings
3/4 jalapeno, thinly sliced into rings – remove spicy seeds if desired
Dressing:
2 TBSP water
1 lime, juiced
1/2-1 lemon, juiced – start with 1/2 and adjust after blending if needed – size/tartness varies
2-3 TBSP tahini, depending on preference – I do 2 to limit the fat since I eat the whole thing myself 🙂
2 tsp maple syrup, more to taste
1/4 jalapeno, seeded
1/2 small garlic clove
1/4″ ginger
pinch Himalayan or sea salt
Method
Add the thinly sliced cabbage, onion, and jalapeno into a large mixing bowl. Add all dressing ingredients to a small blender and blend until smooth. Taste and adjust if desired. Drizzle the dressing over the cabbage salad and tong well until the cabbage is coated. Enjoy the crunch! See video below.
