Shaved Brussels Sprouts Salad Recipe

This shaved brussels sprouts salad is great for both a side salad or a meal. It’s just an easy delicious way to get the benefits of brussels sprouts into our diet. Brussels Sprouts are one of the ultimate liver cleansing foods! I’ll admit that I don’t care for them steamed or baked, but I do enjoy them raw in salads like this one.

Shaved Brussels Sprouts Salad Recipe

The salad comes together in around 10ish minutes. You can also prepare it a few hours ahead of time if you are having a dinner party.

I added 1 tsp olive oil as well.

Shaved Brussels Sprouts Salad Recipe

Serves 4

Ingredients

  • 1 lb./16 oz brussels sprouts, ends cut off and thinly sliced
  • 1 large apple, cut into small little strips, I use Fuji or Gala
  • 1 shallot, chopped
  • 1 juicy lemon, more to taste depending if you add in olive oil
  • optional: 1 tsp – 1 TBSP olive oil, I use 1 tsp
  • 1 tsp raw honey, more to taste
  • pinch of sea salt or Himalayan salt
  • ground pepper
  • optional: 1/4 cup pistachios

Instructions

  1. Prep and thinly slice the brussels sprouts, cut the apple into small thin strips, and chop your shallot. Add it all to a mixing bowl or directly to a serving bowl.
  2. In a small dish, whisk together the lemon juice, olive oil (if using), raw honey, salt and pepper.
  3. Pour the lemon dressing over the salad and toss everything really well. Taste it and adjust to your preference.
  4. Sprinkle in the optional pistachios and enjoy!
