This cabbage vegetable soup was inspired by the weight watchers cabbage soup that I ate in college (20ish years ago). Although I did not join my friends in weight watchers, I joined them in eating their soup! It’s a simple soup; nothing over the top, but some days it hits the spot.
This is one of those soups you can play around with different vegetables depending on what you have on hand. The only thing I would not suggest is using red cabbage instead of green. I’ve done it before since it was all I had, but I could not get over the color. …It was scary looking.
If you want to make the soup a little more colorful, use different colored carrots – I used yellow and orange here. When I have collard greens on hand, I like adding in those as well! Use the recipe as a guide and put your own spin on it depending on what you have on hand.
Cabbage Vegetable Soup Recipe
Ingredients
- 1 yellow onion, chopped
- 1 jalapeno, seeded and diced
- 4 garlic cloves, minced
- 3 sticks/ribs celery, sliced OR 1 sliced zucchini
- 2-3 carrots, coined
- 2 32oz cartons vegetable broth (clean brands – Trader Joe’s Hearty Vegetable & Bonafide)
- small/medium head of green cabbage, chopped (use less if you wish- I like a lot)
- optional, 1 bunch of collard greens, chopped up
- 3 TBSP tomato paste or 8 oz strained tomatoes – (whatever you have on hand)
- 2 tsp dried oregano
- 2 tsp dried basil
- salt and pepper to taste, I use 1/2 tsp salt
- optional – add a smidge of lemon to cut down on salt and/or brighten the flavor a bit
Method
Pour a little water or broth in a large stockpot and heat on medium. Sauté the onion, jalapeno, and garlic for around 5 minutes and then add in the celery, carrots, a splash more of broth, and sauté for about 10 more minutes.
Once the celery and carrots have sautéed for a bit, add in the cabbage, remaining broth, tomato paste, oregano, and basil. Give it a good stir. It will look like a lot of cabbage, but it cooks down.
Get it to a good low boil. After this, turn down the heat to a good simmer and put the cover on for 25 minutes. Check it and give it a good stir. Simmer for around 10-15 minutes more. Add in salt & pepper to taste or even squeeze in a little lemon if you desire. ENJOY!

- 2 32 oz cartons vegetable broth clean brands – Trader Joe’s Hearty Vegetable & Bonafide
- small head of green cabbage or half of a large head chopped
- 3 TBSP tomato paste
- 2 tsp dried oregano
- 2 tsp dried basil
- salt and pepper to taste
- optional – add a smidge of lemon to cut down on salt and/or brighten the flavor a bit
Instructions

- Once the celery and carrots have sautéed for a bit, add in the cabbage, remaining broth, tomato paste, oregano, and basil. Give it a good stir. It will look like a lot of cabbage, but it cooks down. You can always use less if you wish.
- Get it to a good low boil. After this, turn down the heat to keep a good simmer and put the cover on for about 30 minutes. Stir it here and there. Add in salt and pepper to taste and enjoy! Squeeze in a little lemon if you desire.
