Medical Medium's Wild Blueberry Banana Muffins

I make Medical Medium’s Wild Blueberry Banana Muffins often enough that I thought I would share his recipe here too. These muffins are just an easy go-to.

The ingredients are easy to keep on hand and most people will enjoy them. I will say they taste the best day of, but they can still be eaten within a couple days need be.

Medical Medium's Wild Blueberry Banana Muffins Recipe

This Medical Medium recipe I am sharing is actually a bread recipe, so I do everything the same except pour the batter into muffins and adjust down the time.

I have my grandma’s old muffin tin and use these muffin liners.
This picture is the same recipe except I used store bought oat flour instead of grinding down my own oats.

Medical Medium’s Wild Blueberry Banana Muffins

Makes 12 muffins

Ingredients

  • 3 ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp alcohol-free vanilla extract – I use Trader Joe’s alcohol-free vanilla
  • 1/2 cup unsweetened almond milk – I make my own -it’s EASY & inexpensive!
  • 2 cups gluten-free oat flour – I usually grind down GF organic whole oats in the food processor since it is cheaper this way. It does make the muffins a grittier texture though. Fine store bought oat flour does look and taste a bit better though.
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup frozen wild blueberries – I buy the Wyman’s brand at Costco

Instructions

Preheat oven to 350F. Line a muffin pan with liners.

Place the bananas in a bowl and mash with a fork. Add the maple syrup, coconut sugar, vanilla extract and almond milk. Mix well.

In another bowl, combine the oat flour, sea salt, baking powder and baking soda. Whisk until lump free. Add the wet ingredients and fold gently until you get a uniform batter. Add the blueberries and stir very gently, just enough to incorporate them. 

Since I make these as muffins, I adjust the time down from the recipe. Check them at 20-22 minutes as ovens vary. I end up baking them closer to 25 minutes and then remove them from the hot muffin pan right away. If you are unsure if they are done, just take them out of the oven and let them sit in the hot pan a few minutes before removing them. Let them cool so that the banana sets before eating them….although it is hard to wait. ENJOY!

    Method

    4. Since I make these as muffins, I adjust the time down from the recipe. I bake them for 25 minutes and then take them out of the oven and let them sit in the hot muffin pan for about 5 minutes more. After this, I take the muffins out of the pan & let them cool completely so that the banana sets before eating them.
