
This coconut turmeric ginger warming broth is a go to when my husband or I are feeling run down. Sometimes I’ll just make it to drink on a chilly day though. It warms the insides with the turmeric, ginger, and cayenne in it. I first started making this after a trip to Tulum. I caught a bug of something while there, and my husband walked to The Real Coconut to buy me some broth to drink. It was the literally thee best broth I have ever had and probably ever will have. So while this recipe does not taste like that one, it still brings back good memories. Bug and all. The next time you are feeling run down or want a warm hug in a cup, try this simple recipe out.
Coconut Turmeric Ginger Warming Broth Recipe
Serves 2 large servings
Ingredients
1 quart of vegetable broth
2″ chunk of fresh ginger, skin removed and super finely sliced strips
1/2 tsp ground turmeric
1/4 tsp cayenne
1/8 tsp fresh ground pepper
1/2-1 can of coconut milk, start with 1/2 can and then stir in more depending on taste preference
juice of 1/2 – 1 lemon
Instructions
Add the vegetable broth, sliced ginger, ground turmeric, cayenne, and ground pepper to a pot on the stove. Bring to just short of a boil and then simmer on medium heat for 10 minutes. Add in the coconut milk and simmer a few more minutes. Taste and see how much lemon juice you want to add in. I start with 1/2 lemon, taste it and then decide if I want a second 1/2 squeezed in. Pour in a mug, take a big deep breath, pause to savor the goodness, and enjoy!
You can strain out the ginger in the end if you wish. I do not. I just let any bits that I didn’t drink sit in the bottom of my cup.
