Avocado Caprese Salad Bites Recipe Vegan Dairy-Free

These avocado caprese salad bites are the perfect appetizer, snack, or meal during the juicy tomato season. They are so simple and quick to make!

Avocado is the replacement for the typical mozzarella found in most caprese salads. It gives that creaminess we like from the cheese, but of course is healthier. Besides the texture, avocado contains so many health benefits.

Some Health Benefits Of Avocados:

  • Full of antioxidants and nutrients including iron, magnesium, folate, and glutathione.
  • Helps the body absorb more nutrients.
  • Keeps us looking younger as their raw monounsaturated fat moisturizes our skin.
  • Good for our nervous system.
  • Great for our heart and prevention of heart disease.
  • One of the most easily digestible foods.
Avocado Caprese Salad Bites Recipe Vegan Dairy-Free

Avocado Caprese Salad Bites

Serves 1-2

Ingredients

  • 1-2 medium-large juicy tomatoes
  • 1 ripe avocado
  • 10-12 large basil leaves, 1 for each caprese bite
  • drizzle of olive oil (optional)
  • sea salt & ground pepper, to taste

Instructions

  1. Cut tomatoes into thicker slices.
  2. Cut the avocado in half widthwise (not the usual lengthwise), and remove the peel and pit. Cut into slices that are similar in thickness to the tomato slices.
  3. Spread the tomato slices out on a plate or serving platter. Add an avocado slice to each one and then a basil leaf.
  4. Top everything with a drizzle of olive oil and some salt & pepper. ENJOY!
