Avocado Caprese Salad Bites

These avocado caprese salad bites are the perfect appetizer, snack, or meal during the juicy tomato season. They are so simple and fast to make too!

Ingredients
  

  • -2 medium-large juicy tomatoes
  • 1 ripe avocado
  • 10-12 large basil leaves 1 for each caprese bite
  • drizzle of olive oil optional
  • sea salt & ground pepper to taste

Method
 

  1. Cut tomatoes into thicker slices.
  2. Cut the avocado in half widthwise (not the usual lengthwise), and remove the peel and pit. Cut into slices that are similar in thickness to the tomato slices.
  3. Spread the tomato slices out on plate or serving platter. Add an avocado slice to each one and then a basil leaf.
  4. Top everything with a drizzle of olive oil and some salt & pepper. ENJOY!
