Avocado Breakfast Pudding

If I’m not having this protein powder chia pudding for breakfast right now (after some fresh fruit – berries, grapefruit, apple, kiwi, or papaya), I’m making this oh so creamy and delicious avocado breakfast pudding. Chia pudding is still my #1 go-to at the moment, but this avocado breakfast pudding is a nice one to change it up and easier to make last minute. It’s one you can easily tweak to your needs and tastes as well. I’ve also turned it into a shake for breakfast on the go by adding a bit more water.

Avocado Breakfast Pudding

1 serving

  • 8 oz almond milk – I’ve used water in a pinch too
  • 1 avocado – you could also do 1/2 avocado and 1/2-1 frozen banana if desired
  • 1 serving pumpkin seed protein powder
  • 1 tsp Ceylon cinnamon
  • 1 tsp Maca powder – has a vanilla malt-like taste
  • 1/8th tsp ish monk fruit powder – you could also use a softened Medjool date or a TBSP honey or maple – I’ve had to lower my sugar/starch intake some – yes, even in the form of natural sugars for the time being (potatoes, fruit, honey, maple syrup) due to Candida overgrowth (my old beliefs around Candida were not working for me) and turned to monk fruit powder to sweeten breakfasts and teas. I never thought I would get used to it the first few times having it, but now I don’t mind it in certain things. My sweet tooth has drastically changed now though, so if you try it due to your own health reasons, just know it might take some time getting used to it. If you don’t have a reason to switch though, I would stick with the honey or maple. 🙂 I’ll be going back to honey soon myself for some things, but keep monk fruit around in the places I didn’t mind these past few months.
  • handful of spinach
  • 4 – 5 ice cubes

Add everything to a high speed blender until creamy, pour in a bowl, and enjoy with a spoon. Alternatively, you can turn it into a drinkable shake by adding a tad more water to the blender to thin it out some.
