5 minute lentil salad lunch

Okay, to be fair, this 5 minute lentil salad lunch only comes together this quickly if you already have a batch of quinoa ready to go in your fridge. I love to make 1-2 batches per week of quinoa, beans, and now sweet potatoes with Fall being here. When I have those prepped, it makes packing meals for Mark and making hearty lunch salads like this one for me extra quick.

5 Minute Lentil Salad Lunch

Okay, to be fair, this 5 minute lentil salad lunch only comes together in 5 minutes if you already have a batch of quinoa ready to go in your fridge. Ingredients Method Notes

Ingredients
  

  • 3 handfuls of spinach
  • 2 TBSP raw red onion chopped
  • 1 garlic clove minced
  • 1/2 cup lentils heated up – I use the packaged refrigerated lentils from Trader Joe’s often
  • 1/3 cup quinoa you can heat this up too if desired
  • 1/2 avocado
  • 1 TBSP flaxseed or chia oil
  • 1 TBSP lemon juice
  • cumin sprinkled over all
  • paprika sprinkled over all
  • little cayenne
  • sea salt if needed – the prepackaged Trader’s lentils I use come pre-salted and seasoned too

Method
 

  1. Add everything to a wide salad bowl. Mish mash together as you eat it and ENJOY! Put the phone away, take time to slow down, breathe, and be present with your meal. This makes it so much more satisfying and digests better! Xx
