4 Ingredient Oat Banana Cookies

These 4 ingredient oat banana cookies are just a super simple and extra healthy cookie. I make a small batch when I want a hearty baked carb that’s sweetish and more filling. They are great at home or to pack on the go. You can make them as is or doctor them up a bit with chopped walnuts or add a Hu Gem on top of each. I keep them as is and always make sure to add the cinnamon not only for taste, but for blood sugar support.

These cookies don’t seem like they will hold together at all. They will, they are just different. Don’t overly mash the banana and it will all somewhat stick together. You kind of just form a small cookie with your hand and place on the baking sheet and mash down with a fork.

4 Ingredient Oat Banana Cookies

1-2 servings

Ingredients

1 large ripe banana, mash it in the peel a bit with your hands

3/4 cup GF rolled oats, I buy at Costco

1/2 tsp ceylon cinnamon, if using regular cinnamon use 1/4 tsp as ceylon is sweeter

1 TBSP organic raisins

optional, 1 TBSP walnuts or Hu Gems chopped up – you may need another 1/4 banana if you add both the raisins and these…

Method

Preheat oven to 350. Mash the banana while still in the peel with your hands some. Add the smashed banana to a bowl along with the remaining ingredients and mish mash it all together with a fork.

Form 6 small cookies with your hand and place on a parchment lined baking sheet. Take a fork and press down on the tops of each cookie a bit. Take your hands and press any loose ingredients together so that it’s formed into a solid round. Again, they seem strange, but as long as the mixture is formed into a round and flatted a bit with a fork, it works out when baked.

Bake for 15 minutes and then take out of the oven. Let the cookies sit on the pan a bit and cool some. They will stay together better. Enjoy shortly after!
