
- You’ve got to try out the new Chickpea Avocado Mash recipe on the blog. It’s really good and perfect this time of year. You can add it to toasted bread, romaine lettuce leaves, or served with celery sticks or Mary’s Gone Crackers. If you like chickpea “chicken” salads and chickpea “tuna” salads, you’ll enjoy it.
- My day-time hot tea drink this week has been a doctored up raspberry leaf tea (raspberry leaf tea tastes similar to black tea). I steep a tea bag with a small pinch of lavender flowers in hot water for 10 minutes. After it’s steeped I splash in a good amount of almond milk and stir in some raw honey. It’s cozy and delicious. I highly recommend.
- I was gifted Plant Therapy’s Serenity Glass Diffuser and was shocked at how nice it was when I opened it up. I had always seen it on their website, but it never grabbed my attention. The pictures don’t do it justice. My favorite part is the light options. It has a really pretty diffused light you can turn on which adds so much ambiance to a room. I’m enjoying it as I type this on a rainy day. The flicker option is kind of fun for nighttime too. I highly recommend it if you need a new diffuser. I use a diffuser on the intermittent setting and go very light handed with essential oil drops so it’s not overwhelming.

- I’ve talked about a Castor Oil Pack before, but it’s something I wear most nights while I sleep and think it’s super beneficial. It takes a few times to get used to sleeping with it wrapped tightly around your body. - I made the SweetGreen Spicy Cashew Copy-Cat Dressing on the blog for my family last weekend and it was a hit. I will say it’s an extra spicy one, so start with 1 tsp of the chili flakes. I like 2, but that’s when I’m making it with a rainbow salad, including sweet options like sweet potato and beets, which offsets the spiciness. If I don’t have that sweetness, it would be too hot for me too. SweetGreen’s version is just as spicy. It kind of takes you by surprise. Ha.
- Makes slightly over 1 cup of dressing β 6-8 servings or plenty to cover an extra large party salad. You can easily divide the recipe in half too.Β Best within 1-2 days, but will keep for 3 days. Just add a smidge of cold water or lemon/lime to thin it out and refresh come time.
- Ingredients:
- 1/3 cup + 2 TBSP raw cashews,Β soak in filtered water for a few minutes while adding the rest of the below ingredients to the blender 1st, strain before adding
- 1 cup cilantro, pack it in
- 2 garlic cloves
- 2 tsp toasted sesame oil, I use Trader Joe’s
- 1/2 inch raw ginger or around 2 tsp grated
- 1-2 TBSP maple syrup, depending on sweet preference – I do 1 with 1 tsp chili flakes
- 2 tsp red chili flakes, this amount is super spicy! β I would start with 1 tsp & taste
- 1 lemon, juiced
- 1 lime, juiced
- 6 TBSP cold water
- 1/4-1/2 tsp sea salt, or to taste
- Method:
- Add to a small high speed blender and blend until smooth. Taste and adjust if desired.
