
This healthy and vibrant lentil salad is a great one for batch meals or even a party salad as it makes a large amount. Divide in half for a smaller portion.
Vibrant Lentil Salad
Ingredients
- 2 cans lentils or around 3.5 cups prepared lentils
- 1 cup dried quinoa, cooked according to bag
- 1 bag of spinach, chopped
- 1 large cucumber, chopped
- 1 1/2 – 2 cups grape or cherry tomatoes, sliced
- 2 banana peppers, diced
- 1 large yellow pepper, diced
- 1/2 – 1 cup green olives, roughly chopped
- 1 red onion, diced
- 1 bunch of mint, roughly chopped
- 1 bunch of Italian parsley, roughly chopped (I cut off the large stems, but leave the small ones)
- Shake Dressing In Mason Jar: 3 juicy lemons, 3 TBSP olive oil, huge heaping spoonful of raw honey, 1 tsp oregano, 3/4 tsp ground mustard, 1 minced garlic clove, good amount of sea salt & ground pepper
Method
Add everything together and toss well. ENJOY!
