2 Ingredient Quinoa Tortillas

Easy 2 Ingredient Quinoa Tortillas Recipe

These 2 ingredient quinoa tortillas are so versatile! They have a neutral taste that pairs well with a lot of different fillings. Just know they have more of a crepe type consistency vs a traditional tortilla. They are amazing for what they are though and how minimal the ingredients. If you want the tortillas to have some flavor, add in some spices depending on what you choose to fill them with.

I made a double batch to see how well they would be the next day and they were great! I filled some with hummus, tomatoes, onion, cucumber, & arugula, and another with almond butter & honey. Stick with one batch your first time though and see how you like them.

2 Ingredient Quinoa Tortillas

I used Costco’s organic quinoa.

Ingredients:

  • 1 cup soaked + rinsed organic quinoa, see directions below
  • 1 cup filtered water
  • optional, pinch of sea salt, few shakes of garlic powder, onion powder, or any spices you wish

Instructions:

  1. Rinse 1 cup of quinoa well.
  2. Add quinoa to a small bowl and submerge in water. No need to measure the water, just cover the quinoa. Soak for 3 hours.
  3. Drain & Rinse well.
  4. Add quinoa + 1 cup water and optional spices to a high speed blender.
  5. Blend on high for 1 minute. If needed add 1/4 cup more of water to blend, but 1 should be good.
  6. Heat a non-stick pan over medium heat for a few minutes prior to adding batter.
  7. Add 1/4 cup batter to a hot pan.
  8. Tilt the batter as shown in the video below or use a spoon to spread out the batter a bit (just lightly on the top in circular motions).
  9. Cook a few minutes each side. You’ll know when it gets a bit bubbly all over and the edges come up easy to flip. It gets easier after the first one too.
