This weeks 10 things. 8/8:

  1. My favorite thing I made this past week is this pantry tomato soup. So much so, that I made it 3 times for dinner alongside baked veggies. If you happen to have lots of fresh tomatoes on hand, then look to this roasted creamy tomato soup.
  2. I’ve been back on a mission to clean up and use pantry and freezer items before buying anything in those areas. I do this every so often and it works like a charm. If I need something, I’ll buy it, but this way I clean up my cabinets, don’t have anything expire/go to waste, and save $. I highly recommend doing it once in awhile.
  3. This coconut milk powder is one ingredient (rare for coconut milk powder) and has a really good taste. It is a bit feisty to stir in teas/chaga/chicory, but it works well enough in hot drinks. You can always blend it too. I also use it in place of cans of coconut milk sometimes when I don’t need it super rich. I just blend some with water and add to a recipe.
  4. I shared this simple garlic lemon olive oil dressing tossed with arugula on Instagram this week. The dressing with the arugula feels light and summery. It’s such a simple, but delicious salad to serve alongside whatever else you are eating. You can also use it as base for toppings of choice.
  5. Herb tahini dressings are extra good in summertime with the abundance of herbs. Here is a recipe to go off of; my go-to is often a mix of cilantro and mint, but I use whatever I have on hand. Sometimes I’ll add in 1/2 cup tahini and sometimes it’s 1/3 cup depending on what I’m using it for. If you want a spicy sauce to add some zip to food, try out this tahini sauce:
    • 1/2 cup tahini
    • 1 jalapeno
    • 1 bunch cilantro, cut off the stems for this one and add them to a smoothie or juice
    • 1 lemon, juiced
    • 1/3 cup water, may need a tad more depending on how thick of tahini you have
    • Blend the above ingredients. Add a touch more water if needed and salt to taste.
  6. These no cook overnight steel cut oats are a new recipe on the blog. I made them many many years ago and don’t know why I stopped. I like them much better than oatmeal most of the time due to their hearty, chewy texture. Steel cut oats are minimally processed, better for blood sugar control, and digest slower than rolled oats. I’m currently making them with ground flaxseed mixed in as a way to get flaxseed in some days, but you can easily use them a different way. One example is to just soak them overnight, drain and rinse them in the morning, and add banana, cinnamon, and a drizzle of honey to a bowl. There are so many directions you could take them.   7. My favorite undereye concealer (after trying others and coming back) is Uncoverup by RMS. I also use it as an all over foundation come winter time. I have the color 22 now, but use 11 or a mix of the two in winter.

This 100% organic cotton gauze short sleeve shirt is so easy and comfortable to wear. My linen duvet cover set still looks new after 2 years and I love it so much. Well, minus the few oil stains that I have on it (my own fault), but they are kind of hidden. I highly recommend it and their bedding overall. They have so many options.   9. BaubleBar is having their biannual sale. I think their custom name bracelets are fun and kitschy, their custom bead kit looks like a super great one for kids (or this big kid!), and this necklace is fun for summer. They also have various custom totes and lots of bag charms. Random fact: During a game with friends, I was asked if I could have a million of something what would it be. Jewelry came to mind first. Ha. Lots of different kinds. Cool handmade stuff, gold, silver, stones, gemstones, diamonds, the kitschy inexpensive kid stuff….. I like jewelry. However, I am picky and like unique styles. My husband doesn’t even pick me out gifts on the norm. The only thing he picks out are the extra expensive ones, but 9/10 times I say no. I actually do like surprises funny enough though. Handwritten cards, quality time, and thoughtful gestures are my love language with him.
