- This week I shared what a day of eating looks like for me right now incase you missed it and wanted to check it out.
- Another thing I’ve been switching back to are slightly less processed foods in a few areas. Like steel cut oats over rolled oats, black and brown rice over white rice. I don’t plan to be 100% with any of it and will still use others in certain recipes or when that’s what’s available. I’m just talking about the 80% of the time. Thankfully my taste buds like these switches too. My way of eating will always ebb, flow, and change along the way. Most of the time they are just little tweaks, but sometimes they are bigger. I’m living, learning, and adjusting as I go along. Sometimes it’s a definitive reason why I make changes and sometimes it’s purely trial and error to see what feels best to me in my body.
- I uploaded a new recipe to the blog – coconut broth greens and beans. If wilted dark greens in a warming coconut ginger broth sounds good to you, you must make it. It’s been dinner twice now this week and I still can’t get enough. Oh, it’s easy and comes together fairly quick too.
- I may make this Kale Chickpea Lemon Soup this weekend. It’s an extra easy soup with very basic ingredients, but the caveat is it needs to simmer around two hours for the flavors to come out. A good one when you have the time.
- If you have kids, this Medjool Date Caramel Dip would make a great after school snack with apples. And if you don’t have kids, it’s still a great one to make. It can also be made thinner or thicker in consistency depending if you want a caramel dip, sauce, spread, or a filling for raw or baked goods. You do need a good high-speed blender with a tamper for this one.
- Medjool Date Caramel Dip
- Store in fridge for up to a week.
- Ingredients:
- 20 super soft room temperature Medjool Dates, make sure to pit them – soak in a bowl of water for 5-10 minutes after pitting them if they are not super soft – drain water before adding to blender
- 1/4 tsp vanilla powder, this adds a nice flavor to this dip
- dash of cinnamon
- water, 1 cup water to start, add 1 TBSP at a time until desired consistency is reached
- Method:
- Add all ingredients to a high speed blender. Desired consistency varies, so start with 1 cup of water, blend, and then add an additional TBSP of water at a time. Blend together in a high speed blender until smooth.
- If you’ve been wanting to try a belly button patch for your castor oil, I ordered these and they stick well and come off easily. I was already putting castor oil in my belly button most nights and wearing a castor oil liver pack over my liver as well, but supposedly these belly patches make a difference vs just putting castor oil in the belly button and not having anything cover it? I don’t know. If you have more insight on this, please share with the rest of us. For now, I figure what the heck. It’s easy, inexpensive to try it out, and takes two seconds to add onto my nighttime routine. Castor Oil Liver Pack blog post.
- Now that I’m in my 40’s I keep reading about the importance of weight lifting to preserve and increase muscle mass, reduce the risk of osteoporosis, and the list goes on. Never say never, but I have no interest in lifting weights at this time (besides my little hand held bala-like bangles), but I do realize the importance of weights for me. Enter my new weighted vest. I now put it on for my 20-30 minute morning walk. It’s an easy way for me to include 10 pounds of weight, but not have it feel like a dreaded workout. I’m hoping it helps me with better posture with time too. TBD.
- This week’s Quince Picks: Free shipping, 365 day returns, and quality products for amazing prices is why I shop Quince often. This $30 metal chain strap that comes in shiny gold or silver is great for attaching to handbags where you can change out the strap and want a metal chain. The only caveat is that it’s long and made to be worn crossbody. It’s a really nice chain strap if that length works for you though. This $50 100% organic cotton cardigan sweater that comes in many colors helped put Quince on the “map”.
- Happy Birthday Virgo’s!!! There are many of you in this circle and I love observing and learning from you too! Incase you didn’t know, Virgo’s are the number one health-conscious zodiac sign. Which makes sense that there are a good chunk of them leading and inspiring in the wellness scene! I’m an Aquarius.
