Stewed Spiced Apples

These stewed spiced apples feel cozy & Fall-like and are so easy to make. You can eat them as is, on top of oatmeal, with granola and vanilla nice-cream, or as a pie filling. When you eat them on their own, they are sweet enough without needing sweetener, but with oatmeal or a pie-filling, you'll probably want to add some maple syrup, maple sugar, or coconut sugar depending on the taste you are after.

Ingredients
  

  • 4 larger apples of choice I like pink lady for these*
  • 4 good dashes of Ceylon cinnamon or regular cinnamon
  • 3 dashes ground ginger
  • 2 dashes ground clove
  • 2 dashes ground cardamom
  • 1/4 cup water use 3 TBSP if only have small apples

Method
 

  1. Wash and cut the apples into small chunks, leaving the skins on.
  2. Add apples, 1/4 cup water, and spices to a medium sized pot over medium-high heat. Stir and bring to a good simmer. Now turn down the heat to medium. Cover with a tilted lid and simmer for 10-12 minutes, stirring here and there.
  3. Depending on desired consistency, cover completely for 2-3 more minutes, or remove the cover.
  4. They are so good as is, but you can also add to oatmeal, enjoy with granola and vanilla nice-cream for dessert, or however your heart desires.

Notes

*Apple Tidbit - Each type of apple will deliver a different flavor. I prefer a more mild apple to eat, but in juicing, smoothies, and these stewed apples, the sweet tartness of pink lady apples deliver a lot of flavor.
Just use what you have if you don't have all the spices.
