Method
- Sauté diced onion and jalapeno in water or coconut oil.
- Add the diced zucchini to the same pan and steam with a cover on. Stir here and there so that the zucchini doesn't stick to the pan.
- Meanwhile, cook the frozen bag of riced cauliflower and frozen broccoli on the stovetop in a separate pan.
- Heat the jar of boom boom sauce in a small sauce pan throughout this time and make sure your 1 cup of quinoa or rice (if using) is ready to go.
- Once all the veggies are cooked, mix everything together in the largest pan or a large mixing bowl. Stir well so that the sauce is throughout. ENJOY!
