Shaved Brussels Sprouts Salad

This shaved brussels sprouts salad is great for both a side salad or a meal. It's just an easy delicious way to get the benefits of brussels sprouts into our diet. They are one of the ultimate liver cleansing foods!

Ingredients
  

  • 1 lb./16 oz brussels sprouts ends cut off and thinly sliced
  • 1 large apple cut into small little strips, I use Fuji or Gala
  • 1 shallot chopped
  • 1 juicy lemon more to taste depending how much oil you add
  • 1 TBSP high quality olive oil, chia, or flax oil more/less to taste
  • 1 tsp raw honey more to taste
  • pinch of sea salt or Himalayan salt
  • ground pepper
  • 1/4 cup pistachios

Method
 

  1. Prep and thinly slice the brussels sprouts, cut the apple into small thin strips, and chop your shallot. Add it all to a mixing bowl or directly to a serving bowl.
  2. In a small dish, whisk together the lemon juice, oil, raw honey, salt and pepper.
  3. Pour the lemon dressing over the salad and toss everything really well. Taste it and adjust to your preference.
  4. Sprinkle in the pistachios and enjoy!
