Protein Powder Chia Pudding

It's much more dense than a traditional chia seed pudding; I find it decadent and rich. The mild nutty pumpkin seed protein powder combined with the slightly sweet vanilla malt-like Maca powder add a really nice flavor to it. The warming spices add additional health benefits and are extra fitting this time of year. I sometimes use coconut milk which adds to the satiety and richness of it, but also use homemade almond milk other times too.

Ingredients
  

  • 4 TBSP chia seeds
  • 1 serving of Pumpkin Seed Protein Powder see item links below
  • 1 tsp maca powder
  • 1/2 tsp Ceylon cinnamon
  • 1/4 tsp cardamom
  • dash of clove powder
  • sweeten with desired sweetener - 1 TBSP maple syrup or raw honey or I use 1/8 tsp of monk fruit powder (link below)
  • 1 cup milk of choice, coconut adds to richness & taste I use 1/2 cup coconut milk from box below or you could use 1/2 cup canned and 1/2 cup water OR use 1 cup Malk coconut milk. If it's too thick depending on what you use, add a splash more. I like this one extra thick though. I use 1 cup of homemade almond milk sometimes too.
  • optional pinch of pure vanilla powder

Method
 

  1. Add everything to a 16 oz mason jar in the order above. Be sure to add the milk last so it's easier to shake the ingredients in the end.
    After you add the milk, immediately put on the cover and shake well until everything is combined. If you see any chia seed clumps or powder sticking to the sides, open the jar and stir.
    Place in the fridge for a few hours or overnight for the best consistency. I will still make it last minute and eat it in 30 min-1 hr too. ENJOY!

I've been making my own coconut milk with this box.  I add the contents to a high speed blender along with 32 oz water and store in a mason jar in the fridge.  It will separate a bit in the mason jar.  I scoop out the hard stuff to add to sautéed veggie dishes or soup and use the liquid for chia pudding or wherever else I want coconut milk.  To make it go further, I'll sometimes water it down even more.
