Method
- Add everything to a large soup pot and bring to a good boil. Lower the heat to a low simmer and cook covered for about an hour. Once cooked, remove any large thyme twigs and carefully add batches to the blender. Blend until mostly smooth. I keep mine a little chunky, but you can make it whatever consistency you wish. Enjoy the nourishing mug or bowl!
Notes
While I call it a soup since I keep in the vegetables and blend them, you can also strain them to make a broth. I bulk up Medical Medium's recipe to make more meals out of it, but I have the original recipe in the website post as well. You can decide what you prefer.
