Easy Ramen Noodle Recipe

Who else loved eating ramen noodles in college? Seriously. I knew they were terrible for me, but I loved those noodles. It was comfort in a bowl. So when I saw a pack of millet & brown rice ramen noodles at the store, I knew I had to try them. Turns out they are delish. So if you are in the mood for a simple, easy ramen noodle recipe that is healthier than your college days, this will be right up your alley. Ok, so it's not stick it in the microwave easy, but it's close enough.

Ingredients
  

  • 1 Lotus Foods Millet & Brown Rice Ramen Cake
  • 1/4 cup of chopped up scallions or more to your liking
  • 1 cup of vegetable broth - I use Trader Joe's Organic Hearty Vegetable Broth - Bonafide is also great
  • Himalayan Salt and/or Dulse Granules to taste - I add a good amount of dulse with a sprinkle of salt
  • a shake of Red Pepper Flakes

Method
 

  1. Make 1 ramen cake according to the package less 1 minute cooking time. This is because you will be cooking the noodles in broth again for about a minute after rinsing them.
  2. Strain and rinse with cool water.
  3. Put the rinsed & well strained noodles back in the heated pan with 1 cup of vegetable broth, 1/4 cup scallions (or more), a good pinch of Himalayan salt and/or Dulse, and a shake of red pepper flakes if desired.
  4. Turn on high heat for about a minute until it comes to a low simmer. Time this minute so you don't overcook them.
  5. Take it off the heat and serve in a bowl. Add additional salt, dulse, or red pepper flakes to taste. Enjoy!

Notes

Don't go right to making the noodles in the broth and skip the boiling in water & rinsing part. I tried it once. Muck.
Mushroom Ramen is made easy by sticking to this recipe, but replacing the vegetable broth with Pacific Mushroom broth, and adding Trader Joe's Umami Seasoning Blend. So good as well.
